Fresh Black Winter Truffles from Manjimup now available

Everyone deserves a treat every now and then don’t you think? Buffalo mozzarella & truffle arancini, green beans with pancetta, crème fraiche & truffle, scrambled eggs with cream & truffle or perhaps spaghetti alla chitarra with truffle & porcini. Australian Capers

Some years ago Maggie Beer commented on how strange it was that no-one grew Capers in Australia.  After a couple of research trips to Mediterranean countries renowned for capers and much reading, Jonathon Trewartha decided it was worth making an attempt to develop a new Australian industry replacing imported capers with a high quality Australian product.

NEW from Yarra Valley Dairy

We all know and love Yarra Valley Dairy’s Persian Fetta, it’s a firm favourite here amongst staff and one of our best selling cheeses. Upon hearing that Yarra Valley were releasing three new marinated fresh cheeses, I just couldn’t wait to try them and as you might guess I wasn’t disappointed.

 

Cardi is a soft fresh goats’ milk cheese marinated with cardamom pods, shallots, coriander and black pepper. Brilliant with lamb rubbed with paprika, stuffed into mushrooms, or crumbled over baked eggplant.

 

Saffi is a creamy fresh cows’ milk cheese marinated with saffron, lemon zest, cumin seeds and garlic. Amazing in an omelette, through a cous cous salad or to finish a tagine.

 

Juno is a soft fresh goats’ milk cheese marinated with juniper berries, green olive, rosemary, red capsicum and garlic. Delicious crumbled over handmade gnocchi, in a Greek-style salad, or on bruschetta with sardines and fresh tomato.

 

Maggie Beer Soups

Now that winter is upon us and the nights are lovely and crisp, a bowl of lovely hot soup seems a perfect choice for a quick and easy dinner. I quite like making my own soups and often do however there are certainly those times when I simply just don’t have the time and all I want is a hearty bowl of belly warming, home cooked soup. Maggie’s are by far the best packaged soups I’ve tried and of the four different flavours it’s hard to choose a favourite. They come in a 500ml size, perfect to serve two people (or 2 days lunch) if you add a crusty baguette and some French salted butter. I can’t help myself and also add a dollop of cream and some fresh herbs...   

 

 

Callebaut Caramel Chocolate

Upon opening the first bag of this gorgeous new chocolate I was overcome with a rich, sweet caramel aroma. Then I tasted it, sweet yes, but silky smooth and a honeycomb like flavour that immediately had me dreaming of what I could make with it. Caramel chocolate cheesecake, caramel choc chip cookies, hot caramel chocolate sauce for vanilla ice cream, salted caramel chocolate anything... Need I go on?

 

Jane was the first to experiment with them. She made a ganache by melting down the chocolate with some cream and added fleur de del to taste. She then piped it into some of our little pastry tart shells, set them in the fridge for a bit and then before serving sprinkled a little more fleur de sel on top... Delish!!!!!!!!

Brisbane Food Events

         

The Brisbane Cheese Awards THIS WEEKEND held at the Royal on the Park (Alice Street, Brisbane) is Queensland’s biggest cheese event for the year and is a great opportunity to taste lots and lots of you guessed it – cheese! There’ll be Dairies from all over the country showing off their wares and you’ll get to try all of the award winning cheeses from the Cheese Awards which are held the previous day.
